Description
We’ve simplified the prep and amped up the flavor for this hearty Italian-American pasta bake. A cheesy ricotta and spinach filling goes right into uncooked pasta tubes. Cook them with a sauce made from a big jar of your favorite marinara sauce plus bulk Italian sausage and some beef broth. As the pasta bakes, it will suck up the extra liquid to arrive at a perfect tenderness. The recipe makes enough for a 9x13-inch dish plus an 8-inch square dish; cook both now, or freeze one for later. The recipe is a Yummly original created by Ivy Manning.
Ingredients
- cooking oil spray (or a little extra-virgin olive oil)
- 1 Tbsp. extra-virgin olive oil
- 1 lb. mild Italian sausage (bulk, also called sweet Italian sausage; or sausage links, casings removed)
- 32 oz. marinara sauce (1 large jar)
- 1 cup beef broth
- 10 oz. frozen spinach (thawed)
- 15 oz. ricotta cheese (whole-milk or part-skim)
- 12 oz. shredded mozzarella cheese (divided; 12 oz. is 3 cups)
- 1/2 cup grated Parmesan cheese (divided)
- 1 large egg
- 1 tsp. garlic powder
- 1/2 tsp. ground nutmeg
- 8 oz. manicotti (14 noodles, uncooked; for easy filling, look for ones that are nicely rounded rather than flat)
Directions
- Preheat oven to 350°F; if you’ll be baking both dishes of manicotti, and they won’t fit on the same rack, set racks in upper and lower third of the oven. Spray a 9x13-inch baking dish and an 8-inch square baking dish with cooking spray. Cut a piece of parchment paper to fit over the top of each baking dish but set parchment paper and baking dishes aside separately.
- Heat olive oil in a large saute pan or frying pan over medium-high heat. Add sausage and cook, stirring often and breaking it up into small crumbles with a spatula, until it’s browned and cooked through, about 5 minutes. Spoon out and discard fat from pan.
- Add marinara sauce to the pan over medium-high heat. Pour broth into marinara sauce jar, replace the lid, and give it a good shake to loosen any remaining marinara. Pour broth mixture into pan and bring to a simmer. Reduce heat to low and simmer, stirring occasionally, while you stuff the manicotti.
