- 1/4 tsp. red pepper flakes (to taste)
- 1/2 cup lentils (green or dePuy)
- 1/2 cup red lentils (split)
- 5 cups vegetable broth
- 1/2 tsp. turmeric
- 2 Tbsp. unsalted butter (or olive oil)
- 3 cups kale (roughly chopped)
- lemon (squeeze of, optional)
- 1/2 cup chopped parsley (for garnish, optional)
- 3/4 cup grated Parmesan (or something similar, dry and sharp)

This was delicious. Altered it only a little. We're not big fans of onions so I only used half. I also reduce the red pepper flakes by half.
In addition to the lemon juice, parsley, and parmigiana. We also served it with avocado and yogurt.
I would definitely make this again, maybe tomorrow. I think this is my new favourite soup!
