- 6 lb. apples (sized, Gala and Fuji are fine, 600-650 grams)
- 1 cup plain yogurt (250 grams)
- 2 eggs
- 2 cups spelt flour (or all-purpose flour, 250 grams)
- 1/2 cup cane sugar (unrefined, or white sugar, 100 grams)
- 1/3 cup expeller pressed canola oil (I used, but any canola oil works fine, 80 grams)
- 2 tsp. baking powder (8 grams)
- 1/2 Tbsp. cinnamon (divided)
- 1 large lemon (zest and juice)
- 1 pinch salt
