- 3 Tbsp. red curry paste (store-bought, such as Thai kitchen)
- 4 Tbsp. curry ("my homemade red, flavor booster" see below)
- 1 can coconut milk (full-fat, 14 oz can)
- 1 cup chicken stock (or chicken broth)
- 1 Tbsp. fish sauce (red boat)
- 4 carrots (medium size loose, diced to large chunks)
- 3 zucchinis (diced to bite sizes)
- 1/2 Tbsp. ghee (for saute use)
- lime zest (before serving)
- basil (chopped, Thai or Italian basil before serving)
- 5 cloves garlic
- 1/2 shallot
- 1 1/2 Tbsp. ginger (sliced)
- 1 cup fresh cilantro (or parsley)
- 2 chili pepper
- 1/2 tsp. red pepper flakes
- 1/2 lime zest
- 1/2 lime juice
- 1 tsp. sea salt
