- 1 shallots (large or two small, finely chopped, 1/2 cup)
- 1 bulb fennel (cored and chopped, tough outer layer removed; about 1 1/2 cups total)
- 1 clove garlic (minced)
- 2 stems fresh thyme (chopped, 1 1/2 teaspoons)
- 2 cornish hens (1 1/2 to 2 pounds each; see headnote)
- 2 Tbsp. extra virgin olive oil
- 1 tsp. sea salt (plus more as needed)
- 1/8 tsp. freshly ground black pepper (plus more as needed)
- 3 tsp. unsalted butter (plus more as needed)
- 1/2 yellow onion (medium, diced)
- 1/2 Asian pear (firm, or small Bosch pear, cored and diced, no need to peel)
- 1 rib celery (diced)
- 1 tsp. fresh sage (chopped)
- 1/2 cup stuffing (cooked/packaged herbed, prepared to package directions, using chicken broth instead of water, less than 1/4 package stuffing mix uncooked)
- 2 Tbsp. calvados (or other fine brandy)
- 2 tsp. guava jelly (may substitute 4 teaspoons wildflower honey or other mild variety)
- 1/4 lemon
