- 5 cups napa cabbage (finely chopped & lightly salted)
- 1/2 lb. ground pork (or ground chicken works)
- 2 tsp. minced ginger
- 1 stalk scallion (finely chopped)
- 1 Tbsp. Chinese cooking wine (dark, or sherry)
- 1/2 tsp. sesame oil
- 2 tsp. lite soy sauce
- 1/2 tsp. sugar
- 1/2 tsp. kosher salt
- 1 Tbsp. cornstarch
- 1 pinch white pepper
- dumpling (1 pack “Twine Marquis” brand, wrapper, “Shanghai style” thickness, Leave at room temperature over night the day before you make the dumplings, this will make the wrapping part much easier)
- 1 tsp. sesame oil
- 1 Tbsp. black rice vinegar (Chinese, Malt vinegar is a good substitute.)
- 1/2 tsp. garlic (finely grated)
- 1/2 tsp. sugar
- 1 tsp. Chili (“Lau Gan Ma” crispy, in oil, optional)
