- duck carcass (The whole, plus any meat scraps)
- 1 onion (large, unpeeled and cut into quarters)
- 1 stick celery (cut into several pieces)
- 1 carrot (large organic, don't bother to peel, just cut the end off)
- 4 whole peppercorns
- 2 star anise
- 2 bay leaves
- 3 cloves garlic (peeled and whole)
- ginger (small finger of, peeled and crushed slightly)
- 1 bunch parsley (stalks)
- 2 onions
- 1 leek
- vegetable
- courgettes
- 50 mL soy sauce (to taste)
- juice (a lemon)
- 1 tsp. stock (organic, powder, only if needed)
- 200 grams noodles (I use organic wholewheat, but soba noodles are also good)
- 3 kale (shredded leaves of, or spinach)
