- 1 green bell pepper (large, chopped)
- 1/2 red bell pepper (chopped)
- 2 garlic cloves (plump, minced)
- 2 cups long-grain rice (uncooked)
- 3 cups homemade chicken stock (or canned chicken broth)
- 1/4 tsp. Tabasco Pepper Sauce (store-bought or homemade, or other Louisiana hot sauce, or more to taste)
- 1 bay leaf (dried)
- 1 tsp. mustard powder
- 1 1/2 tsp. table salt
- 3/4 tsp. dried thyme (crumbled)
- 1/2 tsp. pepper (freshly milled)
- scallions (A handful of thin-sliced, rings, green and white portions both)
