- 3 bay leaves
- 2 tsp. fresh thyme leaves (minced, or a mix or 1 teaspoon dried)
- 2 lb. Yukon Gold potatoes (peeled and cut into 1 1/2-inch chunks)
- 1 bunch ribs (Lacinato or curly kale, discarded, leaves roughly chopped)
