- 1 1/2 Tbsp. brown sugar
- 1/2 Tbsp. fish sauce
- 1 tsp. chili oil (or chili flake, optional)
- 2 lb. wide rice noodles (fresh, see notes)
- 3 Tbsp. neutral oil
- 4 cloves garlic (minced)
- 1 lb. boneless skinless chicken thighs (cut into thin strips)
- 1 Tbsp. cornstarch
- 2 eggs
- 2 tsp. soy sauce
- 1/2 yellow onion (chopped)
- 1 red bell pepper (seeded and chopped)
- 1 bunch green onions (cut into 1” pieces, keep the white/light green and dark green parts separate)
- 1 jalapeño (seeded and cut into very thin strips, optional)
- 1/2 cup bamboo shoots (thinly sliced, optional)
- 1 cup Thai basil leaves (you can substitute regular basil too)
