- 1/2 onion (diced very small)
- 1 carrots (diced very small)
- 2 stalks celery (diced very small)
- 1 Tbsp. olive oil
- 1 Tbsp. minced garlic (from a jar, use less if fresh garlic)
- 1 tsp. dried thyme
- 1 tsp. Spike Seasoning
- 3 chicken cook pre (links, or turkey sausage, diced in 1/4-1/2 inch pieces, I used Aidell's Artichoke and Garlic Chicken Sausage)
- 1 can tomatoes with juice (petite dice)
- 6 cups chicken stock (or 4 cans chicken broth)
- 1/4 cup brown lentils
- 1/4 cup red lentils
- pepper
- salt
- 1/4 cup long-grain brown rice (I like Uncle Ben's brown rice)
- 4 cups fresh spinach (chopped)
- 2 Tbsp. balsamic vinegar

This recipe was tasty, but it had some technical difficulties. I added twice as much brown rice and an additional 1/4 cup of lentils and they didn't really make an appearance in the dish. Other than that, it was good! Still tasty as a vegetarian option without sausage.
