- 1 yellow onion (each, quartered)
- 1 head garlic (halved)
- 1 Tbsp. red pepper flakes
- 4 thyme sprigs (each)

- 8 double cut pork chops (each)
- 1 lb. shelling beans ( fresh, if using dry beans, like Cannellini, or Pocha soak overnight in water)
- 1 yellow onion (each, medium, diced small)
- 3 garlic cloves (each)
- 1 carrots (each, small, peeled, cut in half)
- 4 thyme sprigs (each)
- 1 bay leaf (each)
- 2 tsp. salt
- 1 tsp. black pepper
- water (Reserved hock poaching)

- parsley (As needed, fresh, chopped)
- 1 ham hock (small, smoked)
- water
- 1 cauliflower (each, medium head, break into small flowerets approximately 1/2")
- 10 floz white vinegar
- 6 floz water
- 3/4 cup sugar
- 2 tsp. salt
- 2 tsp. mustard seeds
- 2 tsp. celery seed
- 1/4 tsp. turmeric
- 1 green bell pepper (medium, small dice)
- 1 red bell pepper (medium, small dice)
- 12 oz. yellow onion (small dice)

Directions
- In sauce pot, add all ingredients.
- Bring to a boil, cool completely.
- Submerge Chops and brine for 12 hours
