I made these into muffins, they were delicious! I used coconut oil as I didn't have safflower, not sure if that is why the seemed a bit dense, which wasn't bad, it just added to the fudgy quality along with the melted chocolate chips, but they weren't very pretty looking muffins. Though the bread might also have turned out dense, I don't know.i may try spectrum organic shortening next time to see if they turn out any fluffier. But my kids LOVED them, so it's a keeper!
