  • 1/2 tablespoon instant coffee (optional)
  • 3/4 cup milk
  • 3 teaspoons vanilla extract

  • 2/3 cup cocoa (I usually use organic cacao or dutch processed cocoa)
  • 2 teaspoons baking powder
  • 1/4 teaspoon sea salt
  • 1 1/2 cups unbleached all purpose flour
  • 1/2 cup bittersweet chocolate chips
  • muffin (paper, liners)
  • olive oil spray
  • powdered sugar (*Optional-, if making shapes atop cupcakes.)
  • 8 ounces cream cheese (softened)
  • 8 ounces softened butter (room temperature, not melted)
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1/2 cup frozen cherries (thawed and liquid well squeezed out)
  • 2 cupcake (standard sized, pans)
  • 18 muffin (paper, liners)
  • 1 pie (pan, preferable glass, but other ok.)
