- 2 tsp. baking soda (NOT BAKING POWDER)
- 1/2 tsp. salt (I use table salt)
- 2 tsp. cinnamon powder
- 2 cups grated carrot (Note 5)
- 1/4 cup shredded coconut (plain or sweetened, Note 6)
- 1/2 cup chopped pecans (or walnuts)
- 6 oz. cream cheese (at room temperature)
- 225 grams unsalted butter (softened)
- 1 tsp. vanilla extract
- 4 cups icing sugar (confectionary /, sifted if clumpy)

Made2017-10-29. Moist and delicios. Made 8 muffins and 1 8 inch square cake . Added 1 tsp of vanila and replaced 1/2 of oil with applesauce. Used 14 oz can of pineapple as that is what i had on hand. Frosted cake with 4 oz of cream cheese, 1tsp vanilla and 2 Tbsp of milk
