- 1/2 bunch kale (de-stemmed and chopped into bite size pieces)
- 4 oz. spring mix (organic)
- 1/3 red cabbage (a small head of, chopped into bite size pieces)
- 2 carrots (chopped or cut into thin ribbons with a vegetable peeler)
- black beans (½-1 cup cooked)
- 2 portobello caps (chopped and marinated in dressing for at least 1 hour, but overnight is best)
- 1 beets (large or 2 small roasted, chopped into bite size pieces)
- 1/2 cup red pepper (chopped)
- 1 cup brussels sprouts (roasted)
- 1/4 cup sunflower seeds
- 1/2 avocado (sliced)
- 1/4 cup balsamic vinegar
- 2 Tbsp. olive oil
- 2 Tbsp. maple syrup
- 1 tsp. minced garlic
- 1 tsp. Dijon mustard
- 1/2 lemon
- 1/2 tsp. sea salt
- 1/2 tsp. ground pepper
