- 1/2 cup water
- 1/4 cup butter
- 3/4 cup diced onion (finely)
- 3/4 cup finely diced celery
- 2 large garlic cloves (minced)
- 1/4 cup all purpose flour
- 1/2 tsp. dried tarragon (or thyme)
- 3 3/4 cups fish stock (divided)
- 1 3/4 cups red skinned potatoes (unpeeled and cut into 1/2-inch cubes)
- 200 grams cooked shrimp (hand-peeled or other small, patted dry and coarsely chopped)
- 125 grams smoked salmon (any skin removed, cut into small cubes)
- 150 grams fillet (rockfish, also called Pacific snapper, cut into 1/2-inch cubes)
- 150 grams lingcod (or other cod fillet, cut into 1/2-inch cubes)
- 1 cup cream (half and half, 10 per cent)
- salt
- ground white pepper
- 2 Tbsp. chopped fresh dill (or to taste)
