- leg of lamb (A small)
- 1 1/2 qt. water
- 2 onions
- 1 carrot
- 3 stalks celery
- 1 bunch parsley
- 1 Tbsp. chopped parsley
- 1 bay leaf
- 4.5 oz. butter
- 2.5 oz. flour
- 3 egg yolks
- lemon juice
- 4 oz. mushrooms (quartered and cooked)

Directions
- Boil for 45 minutes a small leg of lamb in a quart and a half of water, two onions, one carrot, a few stalks of celery. a small bunch of parsley and one bay leaf.
- Remove the leg of lamb, strain the cooking liquor and reduce to one-third.
- Melt two and a half ounces of butter in a saucepan and mix into this two and a half ounces of flour.
