A perfect dish to get rid of all your about-to-expire veggies and mince meat!
Ingredients

- 250 grams mince beef
- 1 parsnip (peeled and chopped)
- 1 large carrot (peeled and chopped)
- 1/2 onion (peeled and chopped)
- 2 garlic cloves (peeled and chopped)
- 1 stalk celery (chopped)
- 1 Tbsp. flat leaf parsley (chopped)
- 150 mL beef stock
- 1 Tbsp. Dijon mustard
- 100 grams mushrooms (quartered)
- salt (to taste)
- pepper (to taste)
- 2 Tbsp. olive oil (rapeseed/)

Directions
- Put your beef stock on low heat in a small pan and add the mustard and season with salt and pepper. Leave it there while you take care of the rest.
- Heat oil on medium-high heat in a large pan and add the mince meat with the chopped garlic, Keep stirring so nothing gets stuck to the sides or burns.
- After about 1-1.5min, throw in all the chopped veg and the parsley. Throw in the rest of the oil and season with salt and pepper. Keep stirring so that everything gets cooked. Keep doing this for 5min.
- Add the beef stock to your mince/veg, reduce heat to medium/low and simmer for 15min. Don't just leave it there, keep stirring every now and then to ensure a more-or-less even cook.
- Serve in a bowl or deep plate like in the picture and if you feel like it, season some more with salt/pepper.
