- olive oil (Enough, to coat the bottom of your stock pot for cooking)
- 1 yellow onion (chopped)
- 3 garlic cloves (minced)
- 1 red bell pepper (medium, chopped)
- 2 lb. extra lean ground turkey
- 4 Tbsp. chili powder
- 2 tsp. ground cumin
- 1 tsp. dried oregano
- 1/4 tsp. cayenne pepper (u can skip this is you don’t want any hint of spicy)
- 2 Tbsp. salt (I use himalayan, plus more to taste)
- 28 oz. diced tomatoes
- 2 cups low sodium chicken broth (I do 1 cup and 1/4)
- 12 oz. salsa (I love the Green Mountain MILD salsa it just adds extra flavor)
- 15 oz. sweet corn (rinsed and drained, so delicious but I stopped putting corn in mine because it hurts my tummy)
- shredded cheese (optional)
- avocado (optional)
- tortilla chips (optional)
- fritos (optional)
- salt (optional)
- cilantro (optional)
- sour cream (optional)
