- 5 tomatoes (large ripe)
- 3 medium carrots
- 2 yellow squash (medium, or 1 medium size eggplant)
- 3 bell peppers (medium-large, any color, I like using one of each color for visual effect)
- 2 white onions (medium size)
- 8 dill (springs of)
- 1 handful basil leaves
- rosemary (8. couple of springs of)
- 5 cloves garlic
- 2 tsp. seasoning (your favorite, I used Organic Kirkland seasoning; Mrs. Dash is another good choice, or you can use Italian seasoning)
- 1 Tbsp. sea salt (or to taste)
- 1 Tbsp. red wine vinegar (optional–I like the extra kick)
- 5 bay leaves
- black pepper (14., optional, or any spicy pepper of your choice to taste)
