- 1 red bell pepper (chopped)
- 1/3 cup water
- 1/2 cup chili sauce
- 1 cup eggplant (diced small)
- 1 cup zucchini (diced small)
- 1/2 cup onion (diced small)
- 1 cup mushrooms (diced)
- 1 Tbsp. tomato paste
- 2 Tbsp. fresh basil (minced)
- 1 lb. pizza dough (homemade or store bought – I used 1/2 of this recipe, I made a full recipe & froze the other half)
- cornmeal (or flour for dusting)
- 6 oz. cheese curds (Canadian, could just use shredded cheddar)
- 1/4 cup grated Parmesan (use grated not that powdery junk)
