- 3 Tbsp. red wine vinegar
- 1 small shallot (thinly sliced, or about 2 Tbsp red onion, minced)
- 1/2 cup dill (chopped, divided)
- 1/2 tsp. cumin
- 1 1/2 tsp. kosher salt (divided)
- 1/2 tsp. freshly ground black pepper
- 1/2 cup non fat Greek yogurt
- 1/4 cup mint (chopped)
- 1 Tbsp. fresh lemon juice
- 1 cup micro greens (arugula, or your favorite salad greens)
- 1/2 large avocado (thinly sliced)
- 1/2 English cucumber (sliced into ⅛" thick slices)
- 1 heirloom tomato (large, sliced into ⅛" thick slices)
- 4 slices bread (your favorite, I use oatmeal bread for this sandwich, LOVE the texture!)
