I used a combination of red kidney beans, black beans, and cannelini beans based on what I had on hand. I was also short on about 1/2 the diced tomatoes called for, but everything came out great anyway. I didn’t use the optional cayenne and thought the spice blend was exactly right. Not too spicy for the kids but well seasoned for the adults

This chili was outstanding I wish I would've skipped the last step....ouch...I think I will do 1/2 teaspoon of cayenne pepper. I replaced the kidney beans with black beans....I think I will slide this one into my cookbook....
