Yummy! I doubled the cinnamon and added just a pinch of cardamom. I line my baking pans with parchment paper for easy turn-out and cleaning.
The first one I made with brandied fruits in a bundt pan and it looks magnificent—the scraps that stuck to the parchment paper lining were delicious! I’m dribbling brandy over it every day till Christmas.
I have a kid-friendly (no booze) loaf cake in the oven now and in an hour I will put 2 dozen mini-muffins in with it. I’m pleased with the recipe!
