Description
Next time you’re craving Sichuan food, instead of dialing for takeout, make these easy dan dan noodles. In this vegetarian twist on the classic dish, tofu crumbles take the place of traditional pork. The star of the dish is the umami-rich sauce, which combines the creaminess of sesame paste, the savory depth of soy sauce, the tangy notes of vinegar, the fiery kick of chili oil, and the aromatic blend of garlic, ginger, and scallions. The best noodles are dried linguine or spaghetti, which are sturdier than dried Chinese noodles and pair better with the thick sauce. The recipe is a Yummly original created by Diana Kuan.
Ingredients
- 12 oz. linguine (or spaghetti)
- 2 Tbsp. toasted sesame oil
- 14 oz. firm tofu (to 16 oz.; or use extra-firm)
- 4 oz. fresh shiitake mushrooms (about 8 mushrooms)
- 3 cloves garlic
- 1 piece fresh ginger (to make 2 tsp. grated)
- 3 scallions
- 1/4 cup salted dry roasted peanuts
- 1/2 cup Tahini (or Chinese sesame paste, stirred well)
- 3/4 cup water (or a bit more if needed)
- 1/4 cup soy sauce
- 3 Tbsp. chili oil
- 1 Tbsp. sugar
- 1 Tbsp. rice vinegar
- 1 1/2 Tbsp. peanut oil (or vegetable oil)
Directions
- Bring a covered pot of hot tap water to a boil and cook linguine according to package instructions until just tender to bite (al dente). Drain and rinse under cold water. Return noodles to the pot and toss with sesame oil to prevent sticking.
- Meanwhile, drain tofu. Break it into large chunks with your hands, then crumble the tofu into a large bowl. Gently pat tofu with clean kitchen towels or paper towels to absorb excess water. Dry the tofu crumbles enough that they aren’t wet on the surface (they don't need to be bone-dry).
- Discard mushroom stems and mince the caps. Mince garlic. Peel and grate ginger to make 2 tsp. Slice scallions 1/4 inch thick, separating the white and green parts. Roughly chop peanuts. Set ingredients aside.
