- 500 grams noodles (any wheat flour, I used medium egg noodles)

- 1 tsp. toasted sesame oil
- 1 Tbsp. chilli oil
- 750 mL chicken stock
- 1 Tbsp. black rice vinegar (Chinkiang, or balsamic vinegar)
- 1 tsp. Sichuan peppercorns (whole)
- 1 spring onion (large, finely chopped)
