Great alternative to dairy pudding. Wonderful consistency, I reduced the sugar to just over a half cup, increased vanilla to 1 1/2 tsp and added about 1/4 tsp fresh grated nutmeg with the vanilla.

I made this pudding tonight with just a few adjustments using what I had on hand...I used 2 cups of Sweetened Vanilla Almond Milk, 1/2 cup Vanilla Caramel Coffee Creamer, cut the sugar by half & left out the vanilla flavoring. It hasn't had time to cool yet but what I licked off the spoon was absolutely delicious!!!

This pudding turned out perfect. I also made it in chocolate by adding 3 tbsp. of unsweetened cocoa
and two squares of dark chocolate chopped. Because I am white sugar free, I sweetened it with
coconut sugar.
