- 3 cups full-fat canned coconut milk
- 1 Tbsp. nutritional yeast
- 1 1/2 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. smoked salt (or regular salt)
- 3/4 tsp. Cajun seasoning (we use this on everything as an all purpose seasoning)
- 1/4 tsp. black pepper
- fresh lemon juice (Squeeze of, to taste, 1/2 to 2 teaspoons depending on your preference)
- 1/4 cup Parmesan cheese (grated dairy free, I used Violife)
- 1/4 cup mozzarella cheese (dairy free, I used Violife)
- 2 Tbsp. cornstarch
- salt
- pepper
- 1 Tbsp. olive oil
- 6 oz. fusilli pasta (Jovial)
- 1 Tbsp. dairy free butter
- 16 oz. baby bella mushrooms (sliced)
- 12 oz. Italian sausages (fully cooked chicken, look for sausages that are dairy free since some have cheese added)
- 1/2 tsp. Creole seasoning (all purpose cajun/, or more to taste)
- salt
