- 1 Tbsp. baking powder
- 1/2 cup coconut oil (kept solid*)
- 1 egg (lightly beaten)
- 1/2 vanilla bean pod (seeds scraped with the back of a knife)
- 1 tsp. vanilla extract
- 1/4 cup unsweetened almond milk (plus more for brushing)
- 1 cup frozen mixed berries (or Fresh, if using frozen let them sit on the counter for 10-15 minutes before using.)
- 2 Tbsp. creamer (Silk Vanilla Almond)
- 1/2 vanilla bean pod (seeds scraped with the back of a knife)
- 1/2 cup powdered sugar
