- 1 onion (sliced)
- 1 courgette (large, chopped)
- 1 red pepper (deseeded and chopped)
- 1 yellow pepper (deseeded and chopped)
- 1 handful beet (tops or chard, including stalks - roughly chopped)
- 2 handfuls runner beans (tender, topped, tailed and chopped into 1 inch pieces.)

- 1 red chilli (small, deseeded and finely chopped, optional)
- 100 mL tomato passata
- 1/2 tsp. ground cumin
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- black pepper (a good grinding of)
- 1/8 tsp. sea salt (or to taste)
- 2 sprigs thyme
- 1 bunch parsley (finely chopped)
