  • 10 ounces tofu (fried, cut into small cubes)
  • 1/4 pound mushrooms (thick sliced)
  • 1/8 pound cheddar cheese (grated)
  • 1 teaspoon ginger (grated)
  • 1/2 box curry roux (Japanese, 1/8 lb There are three varieties: amakuchi, mild, chukare, medium, and karakuchi, hot. I used sweet, but you can pick your favorite)
  • 4 cups soup (dashi, or 1/2 tbsp hon-dashi powder, 4 cup water)
  • 1 tablespoon mirin
