- 1/4 tsp. salt

- 1 tsp. fresh ginger (finely chopped)
- 1 Tbsp. cornstarch
- 6 red potatoes (small new, cut into 1/2-inch slices, I forgot to cut mine! Make sure you do though!)
- 6 baby carrots
- 2 Tbsp. vegetable oil
- 2 tsp. minced garlic
- 1 medium onion (roughly chopped)
- 2 Tbsp. curry powder
- 1 medium tomato (cut into 1/2-inch wedges)
- 1 Tbsp. soy sauce (or coconut aminos to make gluten free)
- 1 tsp. sugar
