- 2 Tbsp. promise buttery spread
- 4 cups acorn squash , halved and seeded
- 2 carrots (medium, peeled and chopped)
- 1 onion (medium, chopped)
- 3 cloves garlic (finely chopped)
- 1 tsp. curry powder (optional)
- 1 tsp. ground cumin
- 4 cups fat free reduced sodium chicken broth
- 3 Tbsp. chopped fresh cilantro

Directions
- In 3-quart, heavy saucepan, melt Promise® Buttery Spread over medium heat and cook squash, carrots, onion and garlic, stirring occasionally, 5 minutes. Add curry and cumin and cook 1 minute. Add broth and bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 25 minutes or until vegetables are tender.
- In food processor or blender, process soup, in batches, until smooth. Stir in cilantro. Season, if desired, with salt and pepper.
