Absolutely amazing. It really does take some doing to get all that water out of the veg. I’d recommend balling your sweet potato/courgette mix together and then squashing it in the pan. Flipping can be a bit of a challenge so make sure it cooks first before flipping. Whack it in a brioche bun and you’re laughing!
