Description

A mere tablespoon of curry powder goes a long way to giving this dish Far Eastern flavors. Look for madras curry powder, which has a richer taste than your basic variety; it's sold in a tin at specialty food shops and many supermarkets. Here it seasons wild rice that's combined with chicken breast, mushrooms, and bell pepper in a fragrant starter course for a dinner party (when formed in ramekins and unmolded onto serving plates).

  • 150 grams wild rice
  • 450 grams water
  • 1 chicken bouillon cube
  • 1 tablespoon curry powder
  • 1 tablespoon vegetable oil
  • 1 green bell pepper
  • 2 skinless chicken breasts
  • 200 grams mushrooms
  • salt
  • ground black pepper

    Directions

    1. Cook the wild rice in the water with the bouillon cube and curry powder for about 30 minutes. Drain any excess water and set aside.
    2. Add a tablespoon of oil and saute the bell pepper on medium heat for 3 minutes
    3. Add the diced chicken, fillets.
    4. Add the mushrooms and season with salt and black pepper.
    5. Add the rice and cook for a few minutes. Serve with a spicy sauce.
