- 1 lb. carrots (shredded)
- 1 bunch scallions (finely chopped)
- 1/2 cup cilantro (finely chopped)
- 2 Tbsp. fresh ginger (minced)
- 1 clove garlic (minced)
- 3 Tbsp. fresh lime juice
- 3 Tbsp. olive oil
- 2 tsp. salt (divided)
- 2 tsp. black pepper (divided)
- 1 lb. ground pork
- 1 Tbsp. curry powder
- 8 slider buns

Directions
- Preheat a gas or charcoal grill to medium heat.
- In a medium bowl, combine the carrots, scallions, cilantro, ginger, and garlic. Toss to combine well.
- In a small bowl, whisk together the lime juice, oil, 1 teaspoon salt, and 1 teaspoon pepper. Pour oil mixture over the carrot mixture. Toss to combine well. Keep the slaw refrigerated while you make the sliders.
