Used Sun Brand madras curry powder and Sun Luck Chinese Style Five Spice powder.
Sun Brand madras curry powder lists salt as its 4th ingredient. The Five Spice powder contains no salt.
I followed the recipe closely, and I found the result a little too salty.
I’d omit or lessen the salting of the ribs prior to browning.
I also found the Five Spice a bit too strong, but that may be due to the particular brand I used.
I’m not a fan of cooking with plastic wrap, so I used a sheet of parchment under the aluminum foil instead. The sauce was very thin after 3 hours’ cooking. I’d recommend a tablespoon more flour in the curry slurry.
Ribs were very tender, as were the vegetables.
A good recipe for curry lovers, just beware of salt.
Perhaps Kevin could divulge the brands of spices he used?
