- 2 Tbsp. red curry paste
- 2 Tbsp. low sodium tamari
- 1 Tbsp. maple syrup (or 1 pitted medjool date)
- 2 Tbsp. lime juice
- 1 Tbsp. ginger (fresh, grated, or 1 teaspoon ginger powder)
- 1 clove garlic (minced)
- 2 tsp. coconut (sesame, safflower or grapeseed oil, just enough for sautéing)
- 2 sweet potatoes (medium sized, spiralized)
- 1 white onion (or yellow, sliced thinly)
- 1 red bell pepper (pith and seeds removed, chopped into strips)
- 1/2 lb. snow peas
- 4 cups jasmine rice (cooked, or brown basmati rice or cooked quinoa for serving, optional)
