I exchanged the bell pepper for a poblano, did not add soy sauce, and used a can of diced tomatoes with chilis instead of fresh. Turned out just spicy enough for me and my husband and made a TON of food. Leftovers will be amazing. This was SO delicious and I will definitely be making it again.
Reminiscent of the dish I had in India when I was recently there and I am so excited I can make it here at home.
