- 1 Tbsp. olive oil
- 1 1/2 apples (cored and coarsely chopped, about 2 cups)
- 1 yellow onion (medium, coarsely chopped, about 2 cups)
- 4 cups vegetable broth (preferably homemade)
- 1 tsp. kosher salt
- 1 Tbsp. brown sugar
- 1 tsp. curry powder (sometimes I’ve used as much as 1 1/2 teaspoons)
- 1/4 tsp. cayenne powder
- 2 1/2 Tbsp. coconut milk
- 1 glug sherry (1 – 2 tablespoons)
- squash seeds (Toasted, for topping, optional)
