- 4 cups chicken stock
- 1/2 cup heavy cream
- 2/3 cup reduced-fat sour cream

- 1 rotisserie chicken (shredded chicken from, or equivalent home-cooked)
- 20 oz. frozen broccoli florets (thawed)
- 1/2 lb. crimini mushrooms (sliced, in addition to what is in soup)
- 1 Tbsp. extra-virgin olive oil
- 3 cups basmati (uncooked, parboiled)
- 1/2 cup mayonnaise
- 1/2 cup reduced-fat sour cream
- 1 Tbsp. sugar
- 3 cups soup (more as needed)
- 4 Tbsp. curry powder (to taste)
