- 2 chili (red dry)
- asafoetida (4. a pinch of hing/)
- 1 Tbsp. Panch Phoron (/Indian five spice, see below, divided)
- 2 green chili pepper (slit)
- 1 ginger (grated)
- 1 tsp. turmeric
- 1 tsp. red chili powder (optional)
- 1 tsp. sugar
- salt
- 2 Tbsp. oil (using pure mustard oil will impart a nice flavor)
- 1 tsp. ghee
- pepper flakes (optional)
- fresh cilantro (optional)
- mustard seeds (/rai)
- cumin seeds (/jeera)
- fenugreek seeds (/methi)
- fennel seeds (/saunf)
- kalonji (/kala jeera/nigella/onion seeds)
