Spend your Valentine’s evening in and make it even sweeter with this recipe for Currant Panna Cotta. Full of creamy vanilla flavor, the panna cotta base of this tasty dessert has a thick, rich milky smooth texture. The panna cotta should be refrigerated overnight in order to set, so best to make it the day before you plan on serving it. Topped with a homemade currant jam, this creamy, fruity dessert makes a lovely treat.

- 300 grams milk
- 200 grams cream
- 100 grams sugar
- 1 Tbsp. vanilla extract
- 6 gelatin sheets
- 24 gooseberries
- 125 grams currant (fresh)
- 3 Tbsp. blackcurrant juice (drink)
- 2 Tbsp. brown sugar

Directions
- In a pan on medium heat, add the milk, cream, and sugar. Stir until the sugar melts, add the gelatin and vanilla.
- Pour mixture in glass cups.
- Garnish each glass with 3 blackcurrant buds, and refrigerate until the next day.

This panna cotta is pleasingly creamy with just enough sweetness. I mixed raspberries and currants together then garnished as the recipe instructed. This panna cotta should work well with most berries.
