- 3 Tbsp. extra-virgin olive oil
- 3 garlic cloves (large coarsely sliced & chopped, add more if you like it garlicky!)
- 5 tomatoes ( large ripe, cut into random medium-large cubes)
- 2 cups cherry tomatoes (slice about half of them and leave the remaining whole)
- 1 cup chiffonade (sliced fresh sweet basil)
- 1/2 cup Italian parsley (coarsely chopped)
- 1/4 tsp. chili pepper flakes
- 1/2 cup asiago cheese (freshly grated)
- ground pepper
- kosher salt
- chicken breasts
- 4 chicken breast filets (medium sized, if thick flatten out somewhat)
- 3 Tbsp. unsalted butter
- cumin (Ground Turkish, or any nice ground cumin)
