  • 1 eggplant (small, peeled, cut into 1/4 inch cubes)
  • 1/4 cup extra virgin olive oil
  • 12 1/2 ounces salmon (skin removed, deboned, cut into 1/4 inch cubes)
  • 1 avocado (small, peeled, pitted, cut into 1/4 inch cubes)
  • 1 tablespoon fresh ginger (grated)
  • 1/4 cup light soy sauce
  • 1 cucumber (cut into 24 slices)
  • 2 ounces shallots (peeled, finely sliced)

    Directions

    1. Steam eggplant for 15 mins, or until tender. Transfer to a medium bowl, add oil and toss to coat. Let cool.
    2. Once eggplant is cool, add salmon, avocado, ginger and soy sauce and toss to combine. Season. Spoon onto cucumber slices then sprinkle with shallots.
