- 450 grams cucumbers (thinly sliced with a mandolin slicer, I don't peel my cucumbers; see note)
- toasted sesame seeds
- chili powder (ground, optional)
- 1 avocado (ripe, sliced into thin wedges)
- 100 grams tofu (or cooked chicken, or fish, raw and super fresh, or cooked, cut into strips)
- 1 stem sprouts (or sprouted seeds)
- soy sauce (for serving)
- sauce (simple tahini)
- cheese (raw cashew, or other spread)
- radishes (pink, thinly sliced with a mandolin slicer)
- salad leaves
- baby spinach
- fresh herbs
- shiso
- 1/2 mango (ripe, sliced into strips)
- 1/2 jicama (small, peeled and cut into strips)
