- 1 cup granulated sugar
- 1 3/4 cups cake flour (not self-rising)
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 cup unsalted butter (room temperature)
- 2 large eggs (room temperature)
- 1/3 cup plain yogurt
- 1/4 cup canola oil (or vegetable oil)
- 1/2 tsp. vanilla extract
- 2 tsp. gin
- 1 Tbsp. vermouth
- 2/3 cup juice (cucumber, for the batter + 3/4 cup cucumber juice for infusing the cupcakes after they are out of the oven, I used about two cucumbers and got the juice by using a juicer. If you don't have a juicer, you can still make cucumber juice following the directions from Livestrong.)
- 8 oz. cream cheese (room temperature)
- 1/4 cup unsalted butter (room temperature)
- 3 cups powdered sugar
- 1 Tbsp. gin
- 1 Tbsp. vermouth
