- 2 Tbsp. olive oil
- 1 medium onion (finely chopped)
- 1 red bell pepper (small, cored, seeded and chopped)
- 4 garlic cloves (minced)
- 1 Tbsp. tomato paste
- 1 1/2 lb. ground beef (I use 93% lean)
- 2 tsp. ground cumin
- 1 tsp. dried oregano
- 2 tsp. salt (use less if you are sensitive to sodium)
- 1/2 tsp. ground black pepper
- 3/4 cup beef broth (you can use white wine as well)
- 15 oz. tomato sauce
- 2 Tbsp. Worcestershire sauce
- 2 bay leaves
- 1/3 cup raisins
- 3/4 cup pimento stuffed olives
- 2 Tbsp. capers
- 2 red potatoes (medium, peeled and cut into 1/4 inch cubes)
- 1 Tbsp. chopped cilantro (plus more for serving, optional)
