Use chicken legs... I used chicken breast and couldn’t get a good browning/caramelization without over cooking.
The mango salsa is a bit lacking... add more onion, or bell pepper, garlic, ginger, tomatoes, avocado, or something! I love mango salsa but was not a fan of this, even though I added a chili lime seasoning to it! Maybe fresh cilantro would help (I used dry as my cilantro in the garden needs to be replanted).
I also didn’t remove all of the chicken marinade... thinking I’d get a nice sauce to go with it (since I didn’t get much browning). The orange juice in the sauce was a tad too sweet for a sauce though... I’ll suggest making the marinade and tasting it separately to decide if you would like that flavor as a sauce.
Overall I love the pairing of the mango salsa, chicken, quinoa, and Cuban beans. Next time I’ll modify things a bit more... 1) use chicken legs, 2) use fresh cilantro and adjust the mango salsa, 3) don’t use the marinade as a sauce without tasting it first! This recipe is super close to being in my list of favorites but needs a little tweaking. I’m sure some of it was lost in the translation of the recipe to someone new to Cuban cuisine (me).
